Objectives or Summary:

The primary purpose of this seminar is to show the comparison effects of adding natural extracts (clove, Mentha, and thyme) with synthetic BHT on some physiochemical, microbial, and sensory characteristics of lamb patties stored at 4 Cº for 12 days. From the results of this work, it can be concluded that adding natural extracts resulted in a significant reduction in oxidation and microbial count and it’s advisable to use such natural extracts instead of synthetic antioxidants.
